Porto-based chef Vasco Coelho Santos headed south to open his first Lisbon restaurant, in an airy, French-bistro-like spot with sidewalk tables. Lamina — “animal” spelled backwards — hints at the restaurant’s approach: looking at animals, and vegetables too, from less obvious angles. That means offal, from chicken hearts to pig ears, and finding uses for leftovers, as with bread made using spent grain from beer production.
Head chef Inês Azevedo runs the kitchen, with a menu that moves between house charcuterie and dishes cooked over charcoal and wood, with fire playing a central role, alongside preparations made in traditional clay púcaras (tall pots).
Know before you go: At lunch, Lamina offers a weekday set menu with two changing dishes, often riffing on Portuguese classics, such as a grilled sardine cutlet with tomato rice or salt cod Gomes de Sá style.
